Open to suggestions...

I tried to make pancakes this morning. They're always hit or miss for me. I just used a mix and did them in a nonstick skillet with no butter or anything. They came out all bubbly-looking, not smooth and golden brown.
Does anyone have a good recipe or technique?
And while I'm at it, I've never made decent Spanish rice. No matter how much stuff I put in, it tastes like nothing. If you've got a good recipe, let me know.

Spanish Rice:

Brown 1 cup of rice in sauce pan with chopped onion add about 1 tsp of oil or just enough oil to coat rice. Eye ball it. You just want to brown it.

In the blender
1 fresh tomato
1 clove garlic or 1 tsp minced garlic (I usually use minced)
1 chicken bouillon cube
A few slices of onion
1 - 2 cups water. You want your ratio to be the same as if you were making regular white rice. I always blend the tomato first to see how much juice it makes then add my water.

Pour over browned rice, cover and simmer until tender and all water is gone. Fluff with fork and enjoy!

You can add as much onion & garlic as you like...you can't go wrong.
